What are the character traits associated with plants and animals?

In many cultures and, in particular, numerous stories, the belief is that some animals represent qualities and ideas that would be found in human beings. Things such as happiness, freedom, and lazyness are all represented by animals. The eagle, for example, represents freedom, and the lion represents courage. Trees and plants also have believed traits, though I know not any examples. I have heard though that they represent not only human characteristics, but periods of the year, as well, like that of the Chinese zodiac. So, then, my question is this: What other animals have these representations attached to them, and what about the plants? What details can you provide me on them?
