I have many old vegetable seeds that are still viable. My question is: Will the plants that they produce be as productive as those grown from fresh seed?

Yes, they will be just as good but it's likely fewer will germinate.
The seed just houses the genetic material and contains energy stores for the first root and leaf, after that the plant can produce it's own energy and the seed is no longer needed.
